Copycat Pizookie Cookie Skillet

Is there anything better than warm cookies, straight from the oven, with a glass of milk? Why yes, yes there is: warm, gooey cookies straight from the oven, topped with ice cream.

There’s a restaurant nearby that offers this deliciousness on their menu. The dessert is called a Pizookie, and you can get it at BJ’s Brewery and Restaurant. It is amazing. They serve it in a mini skillet, straight from the oven and top it with ice cream. The ice cream gets just a little melty and the combination of hot, gooey cookie with cold, soft ice cream is just a little bit of heaven. There are different variations you can order: chocolate chip, brownie, oatmeal. We’ve tried to duplicate this dessert at home by topping cookies with ice cream, but it just isn’t the same without the skillet. The skillet gives the sides just a little bit of crispiness, while the center is still warm and gooey.

This Christmas, we stumbled upon cookie skillets at Wal-mart! They are seasonal, in the store at Christmas time- but have no fear. You can buy anything on Amazon! Of course, we bought a couple for ourselves as well as for gifts for people we know have the Pizookie obsession, like we do. The gifts were a hit and highly sought after in our family gift exchange game that we play every year.

You can use any cookie recipe to make a Pizookie and you can even use a brownie mix. Simply set your oven to 350, coat your skillet with a non-stick spray, and add your dough. Spread your dough so that it fits about 1″ away from the edge of the skillet, as it will rise and spread during the process. Pop that skillet in the oven for about 12-15 minutes and that’s it! Take it out, top with ice cream and serve immediately! Here’s a little video to show you just how easy it is.

Last night, we tried this out with my M&M cookie recipe. This recipe is the same recipe that I use for chocolate chip cookies; simply substitute the M&M’s for 2 cups chocolate chips.
