Veggie Steak Rolls

 

Happy Labor Day!

I wanted get this recipe for you sooner, because it’s a great meal to throw on the BBQ for the summer holidays, but let me tell you-this past week has been crazy!  My family is in an upcoming production of “Beauty and the Beast” through our church. The show is happening this week which means that last week was full of long rehearsals and on top of that, I have been helping out with the costumes. Stay tuned to read all about our adventures in the show, and to see yours truly cast as one of the “silly girls”.

I am a huge fan of simplicity, especially when it comes to making meals. Don’t get me wrong; there are times when I enjoy being in the kitchen. But when it comes to the everyday hustle and bustle of life, I like to find recipes that are quick and easy to make, but still healthy and yummy.

Summer time is especially tricky. It’s too hot to turn on the oven but then that eliminates a lot of dinner possibilities. Thank heavens for my Instant Pot and the barbeque! Okay, it might be a little toasty outside while barbeque-ing, but lucky for me, my husband takes the lead when it comes to grilling our meals.

Today I’m sharing a dinner idea with you that is perfect for summer time grilling! With labor day coming up, you can still go to that bbq block party and eat healthy. If you don’t feel like grilling, you can also cook it in the broiler. I prefer the taste when it’s cooked on the grill, but it really can be done either way.

To make your steak and veggie rolls, you just need veggies and steak; pretty straightforward! I use thin cut steak and usually find it already wrapped in the meat section of the grocery store. You don’t want to use too thick of meat or it will take forever to cook.

You can use whatever veggies you like, but what I like (and have found works well) are carrots, bell peppers and zucchini.

Wash your veggies and dry them thoroughly. Then, cut them into long strips. If your meat is not cut already, cut into smaller rectangles; approximately 2″ or 3″  by 4″ or 5″ pieces.

Next, take a few strips of each kind of veggie and put it on a piece of steak. Roll the steak up around the veggies and put a toothpick through the ends of the meat to hold into place. Sprinkle seasonings on top of steak. You can use any seasonings you like; we love lemon pepper in this house.

Throw your steak rolls on the grill until the meat is done to your liking.

Voila! It’s as simple as that! You have yourself a quick, delicious and nutritious meal!
