Breakfast sandwiches made simple

I struggle in the mornings. It is fair to say that I am NOT a morning person. I admit that my kids have eaten more cold cereal than I’d like (in my defense, that is most often what they want). I have a hard time getting myself up to prepare an elaborate meal. I will say, things have gotten better this school year, with my daughter in junior high and up at the crack of dawn. Since I am up with her, I’ve been doing really well at preparing breakfast-most days.

A few years ago, my dad gave us a breakfast sandwich maker for Christmas. He’s always picking out unique gadgets and whatnot to give us and I have to say, this is one of the best gifts he’s given us, which is funny because it’s so simple. But, it has made my mornings sooo much smoother and the kids can get a filling meal on the days when I am too tired or uncreative to put something together. It takes less than 5 minutes to make one of these sandwiches and it’s so easy that the kids have learned how to do it themselves! Watch the video and see for yourself!

All you need to do is put down half of your English muffin, followed by cheese and your choice of meat (I buy the premade Jimmy Dean sausage or round Canadian bacon/ham). Then, you put down the middle section of the breakfast maker where you place your egg, followed by the top of the English muffin. Let it cook until the green light goes back on, slide out the middle piece, which places the egg neatly on top of the meat, and voila, you’re done! Yummy, quick and simple!
